Having worked in a specialty coffee roastery/ brewbar for some time and brewing my own pourover coffee basically every day for the last 6 to 7 years I was really surprised about todays outcome of a V60 at 13g/250ml, 20clicks on comandante. It tasted really good! So far I thought dosing lower than 15g would always result in a super weak brew. Some years ago, when using the encore grinder I liked 17/250 best. Realizing this so late, even 2 years after getting the comandante, I feel like this hard bottom limit of 15g I had in my head, really hurt the taste of what I was drinking.
This probably won't come as a surprise to most of you but I maybe someone also never tried dosing below 15g. (?)
What's the lowest dose/ weakest ratio you brewed (V60 or other methods) that tasted really good?

With relatively bad grinders (Encore), you have to choose between strength and extraction, or, to try to get both, end up using a higher dose. With better grinders (Comandante), you can get higher, more even extractions at a given brew ratio, which means higher strength too. So this isn't surprising.
There are problems with very small percolation brews - it's hard to keep the pour speed slow enough to not just blow the grounds out of the path of the water. But if you can do that, they are great. I find it very easy to get dull, astringent brews when brewing even at 15 grams. But it depends on your kettle and on which V60 you have (the 01 size lets you get the kettle lower = less agitation).

So it's been a week since I asked Eve out, and in some ways things have gotten better, but they have also worsened as well.
Eve and I went out before I worked today, she had the day off. The date went great, but she did tell me she was surprised I had asked her out because everyone at work thought I was seeing someone outside of work, which made the date kinda awkward at first. Is that normal for girls to talk about? Never encountered it before.
I did as people suggested and treated them just the same, didn't approach/talk to either of them about Eve or dating, just strictly as coworkers.
So I went to work afterwards feeling really great and the first of the two coworkers has started warming up to me again, she isn't flirty like before, but she was no longer hostile toward me. I worked until closing, and usually the last hour to hour and a half it's pretty much dead. (I work in a Department Store if you haven't guessed by now).
The second coworker, April (no, not her really name) was also working until close, we started at the same time. She was pretty much back to how she was before she heard the rumor. Flirty, touchy, coming out of her way to see me, etc. She was asked to go work the opposite side of the store for a few hours, and I stayed in my section and did the work I was told to do.
I finished about an hour before close, the store was practically dead except for employees in other parts of the store. My manager told me to go see if April wanted any help over on her side, so I did.
Everything was great so far, but then things went south fast.
So, I went up to her and asked her "[Manager] said you might want some help, need a hand with anything?"
She sighed, and I shit you not, "Yeah, I'd like help understanding why you asked Eve out and not me."
I was really surprised (that's putting it mildly) by what she asked, and I tried to shift the topic back to work, so I said, "I'm not talking about that, I meant with cleaning your area."
She instantly flipped shit and started screaming at me about betraying her and how I completely ignore her even though she is in love with me and that's when I started going like WTF. She was saying something about Eve only liking me cause of some reasons, and that's when I started walking away to get the manager, ignoring her pretty much, and she started throwing stuff at me yelling for me to come back and face her and a bunch of other things that kind of just are a blur.
What few customers we had were hearing this and getting WTF looks, and my manager came running over. He was really pissed, took her into the backroom and I'm pretty sure she is fired now, I didn't see her after that.
He came and talked to me to get my side of the story, and he asked me to go home for the rest of the night, apologizing for April's actions and saying he'll see me tomorrow, but HR will have to talk to me. Thankfully, our cameras have audio and video, so if they do look at tapes, they'll know I was telling the truth.
I haven't told anyone else about this, but it's likely going to spread like wildfire throughout work by tomorrow morning, and unfortunately I work the next two days.
I know it's April's fault, but I still kind of feel guilty for it, like I provoked her. She was cute, but I just didn't feel a connection there, especially now that I know she is crazy.
TL;DR: Coworker flipped her shit and screamed at me while at work with customers around, pretty much got herself fired over trying to have a relationship with me after I asked out another girl.
Any advice for work tomorrow?

Make sure you tell the truth in your conversation with HR. That she has a crush on you and that you don't feel the same way, have tried to distance yourself from her while trying to be professional.
And I'd only mention Eve when they specifically ask about her.

15 Bar vs 19 Bar Espresso Machine

I’ve seen around that 9 bars are what should be used for a consistent brew but I’m also seeing that a 15 is the best option. So what’s a 19 bar? Is there much of a difference? If the bar is higher (more pressure) the better?
Top Comment: The 15 and 19 represents the max pressure, not that which is used. All those machines should still produce 8-10 bars during extraction depending on how it’s set up. Neither is really better than the other.

Why is my Espresso Sour

Given this scenario, what possible causes are there to the Double Espresso shot being Sour?
Fresh beans
Ground really fine (w/ baratza vario)
Good temp (have tried 196-204)
Good flow (little channeling, thin stream)
Pressure fine (close reaching overextraction)
Have tried altering the dose a bit (can overdosing cause sour tastes?)
EDIT: I wish there was a reply to all button but I'll address my findings based on the responses. I need to try better beans either way, but as for what I already have I'm trying to improve upon. I believe the issue was with my distribution and tamp. I thought it was fine, since it seemed all very leveled and a lot of people barely put any pressure on it. Keeping that constant, I would fill the basket more to reach desired pressure/extraction time as I cannot grind finer. Some people have said that, although I'm reaching my desired pressure and extraction time, the sheer amount of coffee in the basket is leading to underextraction. I really need help with my grind distribution and tamp, because I have tried other forms of tamping (nutating method where you gyrate the tamper causing all air pockets to fill) and was able to put much less espresso into the basket and still see adequate amounts of pressure; which is great, I just dislike the nutating method and would like to be able to simply distribute and tamp like everyone else does! Pittsburgh PA roasters

Not really interested in the best cafe in Pittsburgh I’m more looking for recommendations on the best roaster in the Pittsburgh area. I have tried many of them but interested to hear others opinions. For me, Commonplace and La Prima both have really good stuff. Seems like new ones are popping up all the time and I’m sure I’m missing some.
Bonus points if they’re into honey or natural process stuff.
